Instructions:
  1. In a mixing bowl, combine yogurt, gram flour, turmeric powder, red chili powder, and salt. Mix well to form a smooth batter. Gradually add water while stirring continuously to avoid lumps. Set aside.
  2. Heat ghee or oil in a deep pan over medium heat. Add cumin seeds and let them splutter. Then, add minced garlic and sauté until golden brown.
  3. Add chopped onions, slit green chilies, and curry leaves. Cook until onions turn translucent.
  4. Pour the yogurt mixture into the pan and stir well. Bring it to a boil and then reduce the heat to low. Allow it to simmer for about 20-25 minutes, stirring occasionally.
  5. In the meantime, prepare the pakoras. In a separate bowl, mix gram flour, chopped onions, red chili powder, turmeric powder, and salt. Add water gradually and mix until you get a thick batter.
  6. Heat oil in a deep frying pan. Drop spoonfuls of the batter into the hot oil and deep fry until the pakoras turn golden brown and crispy. Remove them using a slotted spoon and drain excess oil on a paper towel.
  7. Once the kadhi has simmered for 20-25 minutes, add 2 cups of water and continue to simmer for another 10 minutes. Adjust the consistency as per your preference by adding more water if needed.
  8. For tempering, heat ghee or oil in a small pan. Add cumin seeds, mustard seeds, asafoetida, dried red chilies, and curry leaves. Let them splutter and release their aroma.
  9. Pour the tempering over the prepared kadhi and mix well.
  10. Add the pakoras to the kadhi just before serving. Allow them to soak in the kadhi for a few minutes.
  11. Serve the Punjabi Kadhi Pakora hot with steamed rice or roti.
