Aloo Ka Paratha Recipe:

Ingredients:

For the dough:

  • 2 cups whole wheat flour
  • Water (as needed)
  • Salt (to taste)

For the stuffing:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon amchur (dry mango powder)
  • Fresh coriander leaves, finely chopped
  • Salt (to taste)
For cooking:

  • Ghee or oil (as needed)

Instructions:

  1. In a large mixing bowl, combine 2 cups of whole wheat flour and salt to taste. Gradually add water and knead until you have a smooth dough. Cover the dough and let it rest for about 15-20 minutes.
  2. In a separate bowl, mix together 4 medium-sized boiled and mashed potatoes, 1 small finely chopped onion, 2 finely chopped green chilies, 1/2 teaspoon cumin seeds, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/2 teaspoon amchur (dry mango powder), a handful of finely chopped fresh coriander leaves, and salt to taste. Ensure all the ingredients are evenly incorporated.
  3. Divide the dough into equal-sized portions and roll each portion into a small ball. Flatten it slightly with your hands, dust it with flour, and roll it out into a small circle, around 4-5 inches in diameter.
  4. Place a portion of the potato stuffing in the center of the rolled-out dough circle. Bring the edges of the dough together and pinch them to seal the stuffing inside. Gently flatten the stuffed dough ball with your hands.
  5. Dust the stuffed ball with flour and roll it out into a round paratha, around 6-7 inches in diameter. Be careful not to apply too much pressure while rolling, as it may cause the stuffing to spill out.
  6. Heat a tawa or griddle over medium heat. Place the rolled paratha onto the hot tawa and cook for about a minute or until you see small bubbles forming on the surface.
  7. Flip the paratha and spread some ghee or oil on top. Cook for another minute, pressing gently with a spatula to ensure even cooking and browning.
  8. Flip the paratha again, apply ghee or oil on this side as well, and cook until both sides are golden brown and crispy.
  9. Remove the paratha from the tawa and repeat the process with the remaining dough and stuffing to make more parathas.
  10. Serve the hot Aloo Ka Parathas with a dollop of yogurt, a side of pickle, or any chutney of your choice. These parathas are best enjoyed fresh and hot.
